Just wondering if there is an e-book publisher considered better than others?

The most prolific ebook publisher by far is the Gutenberg Project. They come in plain vanilla text. You can download them by ftp or at one of their many mirror websites. The best part is that they are free and you are encouraged to make copies, the object of which is to promote literacy.
